Ordered the Model 3

I ordered the model 3 yesterday. All the great posts in this forum convinced me that this is the right size for me . I've been tending to a Texas smoker for years now. It turns out great stuff, but I generally only use it for special occasions when we have lots of guests as its so much work!
 
Welcome from Texas! I got my #3 a few month ago and use it regularly. The hardest part of the whole thing is adjusting to the lazyQ method. Prep the meat and the smoker, both very simple, put the meat in and close the door, select temp and then.......yep you guessed it, leave it alone, no peeking! Good luck and happy smokin!
 
I've had mine for a little over a year and can't begin to explain how pleased I am with this smoker!  This is an excellent size.  Big enough large requirements like 40lbs of uncut baby backs and small enough to do well with a single whole chicken or brisket.

The extra size is so nice to have when you need it!

Congrats!  Now that you're part of the family, go ahead and give us a first name and town in your forum signature line.  We like to know each other!  Head over to the Introductions section, too, and tell us a little about your smoking background, and maybe what attracted you to the SI way of Lazy Q!

You're going to find other hobbies/interests to do for those long 12+ hour smokes - other than tending the smoker! ;)
 
Thanks all for the warm welcome. This forum is great. I started on an outdoor kitchen design about a year ago. I was hooked on smoking but couldn't figure a real good way to build in a nice looking wood smoker. I looked into a pellet smoker, but same thing. I had of course heard of electric smokers but thought that they were just a "cheap imitation" and not a good substitute for real wood fired barbeque. Then I met a guy who had just spent like $80k on his outdoor kitchen, I mean he had a 48" gas grill + side burners,, frig, warming drawer, coffee maker, sink...you name it. The funny thing is though, he opens a picture on his cell phone and shows it to me and says.."this is the best part of my kitchen". You guessed it, it was an electric smoker (I dare not say what brand here!). In any case he raved about it so much that I started investigating all things electric. After reading countless reviews on countless web sites for countless brands I started to home in on what I wanted. This forum tipped the scales and helped me chose the right size as well. I cant wait to receive it, but I've told myself I cant use it until I complete my kitchen build. This will likely be about another month though. I'll let you know if I can't hold out til then !!!!
 
Good luck with waiting...  We were moving into a new house when I ordered my #2... I had it delivered to my sister's house.  The Thursday afternoon that it came in I ran over, unpacked it, and did the seasoning smoke. That weekend, it was loaded up with 3 racks of ribs, then sausages, a whole chicken, and a pan of Mac and cheese. Remember.. It was still at my sister's house at that point...  When we were moving into the new house, the smoker was the first thing to move. I had a brisket on while I was moving furniture.
 
No need to wait, Tim!!!  That bad boy will slide into its kitchen spot just as easy, after a half-dozen smokes, as it will "brand new!"  Unbox that rascal, season it, and smoke some Q!! ;)
 
You are right Divotmaker. I probably won't wait, especially with football season just starting... Go Bills!!! I know, I know, not a Texas team, but I'm originally from NY. One of those dam Yankees... the ones that come to Texas and never leave! Yahoo!!!
 
Hey Tim, Welcome from Kansas City, you are going to love the #1. I first started with the #1. Then found a #3 with cart and auber at a great price. I love the #3 because of the size. And I still use the #1 for sides and short smokes. The great thing about the #3 you can put a very large brisket in it or slabs of ribs without having to cut them into. As for waiting, I would wait a day and then season it and thru in some ribs or a Boston Butt for pulled pork. That way while you are working on the kitchen you can have a nice sandwich. Good luck and don't forget the pictures.
 
Picked up my #3 Tuesday but havent had time to unpack it yet! Maybe this weekend. Still working feverishly on the kitchen build!

Hey Tim, you have a lot more will power than the rest of us. Most no more got it unpacked and was doing the season smoke. And a short time later was smokin meat. Good luck on your kitchen build.
