My son found a forgotten 8.2 lb butt in the freezer and brought it out to thaw in the fridge for the past week. I pulled it out a few days ago and did a rush smoke on it. No brine this time just coated with olive oil and Memphis Dust (with salt) while cold from the fridge. I let the rubbed butt rest on the counter for four hours before starting the smoke at 1AM. But went in top shelf, cold smoker set to 235 with 5oz of hazelnut.
I stopped the smoke double wrapping in foil at 4PM. the butt was pulled and enjoyed with tortillas for dinner that night. Today I made home made mac and cheese with Pulled Pork. Next scheduled meal is using the last of the butt with last weeks ham for Cuban sandwiches.
