Today, I treated the office to 4 racks of baby backs I cleaned out of the freezer (had to make some more room). I used a reheat method I'd never tried: The crock pot! I have a big 7-qt model, so 8 half-racks just barely fit! I put about 1/4" of apple juice in the bottom, stacked the racks standing on their sides (upright), and turned it on low for a couple of hours. After 2 hours, I turned it to "warm." At 4 hours (noon), while folks were running to the store to get beans and fixin's, I removed the ribs and sliced them. I put all the sliced ribs back in the crock pot on warm until we ate. Made a fresh batch of St Louis BBQ sauce last night to go with them.
This reheat method worked incredible! I should mention, for those that don't know, the cooked ribs were put in FoodSaver bags while still warm from the smoker, immediately vacuum-sealed, and put in the freezer. The reheated ribs were as good as the day they were smoked! I've used this for pulled pork, but never for ribs. I was going to foil them and put them on the grill, but we had 40-mph wind here today...not conducive to grilling!
I think I have a lot of new folks believing in what you can do with a Smokin-It unit! If they only knew how easy those ribs are. (Our little secret, OK?) I had 3 people, who I've known for a long time, and know don't give compliments lightly, tell me they were the best ribs they've ever eaten. I was humbled, and almost embarrassed, at their gratitude. But it was pretty cool, too! ;D 8)
So, take some of our great Q to your workplace one day, and you can be a hero, too!
