A friend bought a house and this was in the backyard......a model 1
He does not cook and offered it to me. I have a vertical charcoal unit, so I am not new to smoking. I made a brisket today....for 5.5 lbs on 225 (my thermometer actually read 250) took just about 5 hours. It tasted great. I did put a small water pan on the bottom and took 4 chunks of hickory, that I soaked in water for 30 minutes. I usually do 3 hours on the rack and 2 hours covered in parchment and foil. Due to the possible interaction of the rub and mustard I do not put directly in foil.
