Got a good deal on a well kept model 1. Preseasoned bonus!

While I have owned a cheap offset, I really used it for grilling.  LazyQ speaks to me so now I'm ready to put in the "effort"

Picked up a brisket from Costco, $2.14/lb after coupon. Spent a little extra and went with a Smoke thermometer to balance things out.

Tomorrow morning the flat goes on first thing. Wish me luck. Cheers!
 
Everyone complains about the dryness of a flat. I have cooked many with my #2 from select on up. NEVER had a dry one. However, I brine & inject them (at the minimum, I brine). And, I never wrap. Now I get choice packers nearby for less than $3/lb. The flats are usually substantially more / lb. So, no more flats but I still brine & inject. Now, I usually have vacsealed chunks in the freezer when friends & family don't clean me out.
 
Welcome Erik, make sure you post some pictures.  I am doing a flat today.  Lots of great advice on this site!

As for the results, passing grade but nothing spectacular.  Although a little dry, it was still tender and delicious. I obviously recognize it takes tweaks, practice, test, etc.

Thanks for the tips. I wrapped and made a few mistakes on trust and timing, but I definitely want to go the brine/no wrap route one of these days.
 
That meat looks really lean.  I inject but am starting to think I may start larding the leaner portions. But hey, it's BBQ and that ain't bad!
 
Nice looking meal. :) It doesn't look that lean to me for flat. I see a nice layer of fat on the top, which is good. The beer looks tasty too!

For you first brisket it looks good. Left over brisket also makes great tacos and I like to use it for my bbq pizzas.
