More Rib Pics

Decided on a whim to do ribs again yesterday so I ran to Sam's and picked up package of 3 racks of baby backs.  Created my own seasoning which consisted of salt, onion powder, garlic powder, cardamom, rosemary, and red pepper.  Let them rest for a while covered in the fridge and then smoked them for ~4.5 hours.  Used hickory and cherry woods...  probably around 6 oz total since I like a lot of smoke.

Brought them in, slathered them with some BBQ sauce, and threw them in a 450 degreee pre-heated convection oven for ~5 minutes.

I ate a sample and it was quite nice...  then I put them away for tonight since I'd already had smoked wings for dinner.  :)

The camera on my phone makes the seasoning look pretty funky.

Ribs are something I also do on a whim. So easy. And they are great even if you apply the rub and go directly into the smoker. I prefer to go on the high side of the wood recommendations for most everything too. 6-7 ounces hickory and/or cherry for ribs, and the smoke is just right for me.
 
I have had my Smokin-It for 7 days and it has ran 6 of those with 4 of those days being ribs...lol
