Model 3 side rail assembly

I plan on doing some jerky.  Why don't I see a side rail assembly for the Model 3?
Is it because the Model 3 is already large enough?

I presume all I need is:
1) Jerky Dryer
2) Model #3 and #3D Seafood grill rack

Anything else?

Jake, the seafood racks are great (I have one), but if you want to save a bunch of $, for the occasional smoke that you don't want to fall through the cracks, get some Q-Matz from Amazenproducts.  These are washable mats that you can order to cut to size.  I use them a lot, and are substantially cheaper than the seafood shelves.  The fan is the only other essential!

Do you need them?

Well, that depends on how much jerky you plan to do at a time.

I make 20-30 lb batches at a time and sometimes need to use up to 6 racks.

There are some after market type jerky racks that you can buy. There are a few threads on these racks if you do a search for "Jerky Rack". That being said, I bought 5 of the SI Seafood racks and they work pretty good.

You will definitely need the jerky fan to help remove the tons of moisture that will be present in the smoker.

For wood, I prefer to use chips verses chunks for jerky because they start smoking at lower temps. I use about 4 ounces of chips and soak half of them. The soaking delays the start of the smoke from these chips until they dry out thus extending the time in the smoke.

Note: Low temp smokes like this are the only time that I use chips.

About how many pounds will the standard 4 racks do? 
Not sure of the meat weight that comes from Costco, but don't think I'll be doing 20 lb batches.

If I understand better now, the seafood rack is $30 for only one?  Yikes!

For wood chips, do you recommend the "smoker box chip insert"?
 
I think you could get 10-15 lbs on four racks pretty easily. You want to spread them out as much as you can to ensure you have air flow though.

Yeah, the Seafood racks are spendy.

Either the chip box insert of some tin foil with holes in the bottom will work too.
 
Hey Jake,

I purchased the LEM seafood shelves at Bass Pro Shop and they fit perfectly on top of the SI3 shelves and work great for Jerky.  They are about $10 per shelf and you can refer to the post below for pictures and details.

Thanks. I'll have to check out the jerky cannon too.  Curious how it will work with ground buffalo, pork, lamb....MEAT.
 
The Jerky Cannon works great when using ground meat. Any type of meat will work as long as it is extra lean and using the right seasoning makes it just right. I can get about 1.25 lbs on each rack.
