Melt in your mouth baby backs

Got an extremely meaty pack of ribs at Costco and put the rub on them last night. They went in the smoker about noon at 235 for our dinner tonight. Wood was hickory, cherry and apple.

At 3.5 hour mark they will get wrapped in foil with some butter, brown sugar, honey and a couple shakes of rub and put back in the smoker for approx. another hour.

Mmmmmm, very nice.  And I like the sides and desert!

What size smoker is that?  Wood box looks really wide.
 
I haven't tried different types of wood on my smokes yet. Going to have to remember that on the next one!

Ribs look great!
 
Jeremy, I can't remember the last time I used just one variety of wood in a smoke.  Hickory typically provides the depth of the flavor and the use of fruit and nut wood rounds out the flavor profile. 
 
Good looking ribs Dave. Costco seems to always have really great baby back ribs. Much meatier than the average baby back and, at least the ones at my Costco, always have the silver skin already removed.
