MASS QUANTITY ADVICE....

BIG BOB

New member
My wife wants me to do some Boston Butts for a party we are hosting on Saturday, we are going to need at least 4 butts ( if I cook something else) possibly 6 butts. What is the best method to have 6 butts ready by 4pm on Saturday.... my #2 will only take 2 butts - maybe 3 if they are smallish. I, obviously, plan to cook a few ahead of time and keep them in fridge until Saturday.
Questions:

OOOOPS!!! don't know what happened on the 1st post - sorry ....
Questions:
1. if I smoke a couple days beforehand, will the butts stay nice and moist in the fridge until Saturday?
2. would you keep it as one butt or go ahead and shred it up early?
3. i guess we could add BBQ sauce and throw the  pulled pork in a couple crock pots, but I want some of it "plain" so you can taste the flavor.

*** anyone ever try to do this before ...advice would be great.

Bob,

You can definitely cook ahead.  When I do that, I go ahead and pull, just like I'm going to serve it then, then get it into vacuum bags pretty quick (if you have that option).  If not, put the pulled meat in big Ziplocs and try to get as much air out as possible.  The meat will retain the moisture if you get it sealed pretty quick.

When you reheat, just put a little water in the bottom of a pan or crock pot, put the shredded pork in, and heat it up.  It comes out just like the day you cooked it!

ok.... thanks Tony!!!!  that is what is was wanting to hear ... the #2 is gonna get a workout this week! The Colts play Thursday night- sounds like a great night to start the butts!!!

You're definitely going to be the hit of the party, Bob!  I love these smokers!  I took some pulled pork to the office today for lunch.  When I made a couple of sammies, the company owner came by (I had some left in the bucket).  I poured some of my St Louis sauce on and gave it to him.  He licked it clean, and said "you can't BUY barbecue like this!"  Ha!  If he only knew how easy it is with our smokers, and the group of great minds on this forum!!  I'm riding "our little secret" as long as it lasts! ;)

my colleagues also think that i am a great chef....LOL.... i will continue to let them think that.... ;)

I will let you all know how the FEAST OF BEAST turns out.

I often wondered about this same scenario. Glad to know that it is pretty straight forward. I love these smokers and this forum rocks for all the great advice!
