Lots of Ribs

Neighbor asked me to smoke some ribs for a party. Here's 2 racks of baby backs and 2 racks of beef ribs. Not the most aesthetic presentation I've ever done but nobody seemed to care.  This was the most meat I've ever had in the SI2 so was fun getting it done.

They were definitely a hit and of course I did have to try them for quality assurance purposes   Had never done beef ribs before but they turned out great. Wasn't really sure what to expect with beef ribs. Did a little research and nailed it.

Tom, try doing a plate of short ribs. The dinosaur ribs will change your life!  8)
