wait - will do. Was going to check them at 4 hour mark. Do you put a thermometer in your ribs ? I have attempted over fire but wasn't really successful.
You don't need to use a therm for ribs. I go 5 to 5.5 hours for BB ribs, and check them at 4.5 hours when I apply some BBQ sauce for the last hour in the smoker. At 4.5 hours, I usually see the meat pulling back from the bone.
