Look what the FedEx stork delivered!

Was delivered on Wednesday, got checked out and cleaned out. Castors on Thanksgiving morning, hooked up to wi-fi and on back deck today going thru 4 hour seasoning.
Now that I got my garage fridge back, have pork and beef thawing for it’s first smoke. Still deciding what to make first.

Will be doing more sausages and snack sticks than anything else.  Now I can smoke using the proper temps and times. We’ll see what other adventures we can do.

I bought mine primarily for snack sticks and sausages as well.  Are you hanging them, or using racks?  I want to hang mine but didn't want to buy rods for $50 each when I can probably use a dowel rod cut to size.  Any pics would be appreciated if you made something yourself.  Thanks.
 
It been quite a while since I’ve been back in the forum. Been on a lot of the FB groups posting.  I also talk about the benefits of Smokin-it smokers.  I’ve gotten at least two, maybe 3 to order an SI smoker.
For hanging, I use birch dowels, 3/4” cut to fit.  I have 10 of them, but have never yet used all of them.  Been doing more snack sticks than sausage lately and just got to making jerky. Do ground and just finished a batch of whole meat.
I’ll see if I remember how to post a picture using them.

Craig -  Good to see you back. If you have any suggestions for making sausages that don't come out wet, agcrock could use some help.
