This won’t apply to everyone, only to people in cold states, and only in the winter.
But here goes: I really didn’t want to get up at 3:00am to put in the Valentines pork butt. Especially since it’s supposed to be 8 degrees outside by then. So I thought, rather than have the butt taking up space in the fridge, I’ll put it in the smoker, along with the wood chunks and apple juice. Then set stage one at 38 degrees on stage one for six hours, using a tiny amount of heat to keep everything from freezing, then begin the cook with stage 2. Maybe this is common practice, but I’m feeling pretty sharp.
