Just another happy to be newbie

Hi to all. I just wanted to introduce myself. I’m another Tony living in Indiana about 30 miles west of Cincinnati, OH. I’ve been bbqing and smoking for about 30+ years but never had a great smoker. I’ve looked at many styles and come so close to pulling the trigger over the years and now that I’m in my 50’s, I don’t want to tend a fire all night anymore and know that with the ease of using an SI #3D, I’ll smoke much more often and enjoy much more bbq, plus homemade sausage (new obsession), smoked cheese and seafood. I sure don’t claim to be the best smoking guy, just a man and his wife who are world foodies and bbq enthusiasts. My wife and I have judged on the MBN circuit and in fact Myron Mixon was the first team that my wife judged. That was great competition bbq. Last summer we even did a week long tour of Texas bbq and getting our fill of beef. It was quite the learning experience. I think I have some decent taste and hope that I’ll be able to transition it to my new SI.

I have been reading through much of this forum and have really enjoyed it and I am trying to learn a lot. I’ve been using numerous cheapie smokers and lastly aMasterbuilt with a Smoke Daddy attached so I have a little electric smoker experience but I am hoping for great results with the SI #3D that I am getting in two days. I’m also getting the Bella and the James Jerky Drier for sausage and cold smoking seafood.

I hope at some point that I can be a somewhat rookie contributor to this fine forum and continue to learn to create some great bbq. All suggestions and help are appreciated.

Thanks Clay. Had a great little tour of Austin and 100 surrounding miles checking out the Texas bbq scene. That was some good eats and I learned quite a bit.

Welcome from Delaware, Tony!  I think you will be very happy with the #3D.  Let us know how the first smoke goes!  Cheers

Yeah, I'm pretty blessed to have Franklin's, Stiles Switch, all of the Black's locations, Kreutz's, Southside Market, and a bunch more nearby, and of course, Louie Mueller right here in my little town of Taylor.

Thanks to everyone for the welcome. I’ll definitely post pics next week of my first cook. Right now I have a pork butt, a brisket and one rack of Dino ribs (due to my Texas bbq tour) in the freezer. I’m not sure which I will do first, but I’m sure it will be good. I may just get some spare ribs this evening for a quicker cook on Monday. Now, which style of sauce to use.  So many decisions. 🤔😁
