Jerky Dryer?

What does the Jerky drying accessories do?  Is it a necessity to make jerky? 
 
Our smokers are so well sealed that they hold heat and moisture very well.  The jerky dryer is essentially a fan that draws all the moist air out of the box. 
 
I have one and use it, but I would say you could build one much cheaper and better. That being said it works great
 
John, if you plan to smoke jerky or sausage, it is a must.  As said, these smokers retain moisture very well, which is great for ribs/butts/briskets, etc., but not so good if you're trying to remove moisture!  Yes, you can build a fan that will pull moisture out, if you're handy and so-inclined, but the James Dryer is an easy off-the-shelf solution, if you need it.  Works great!
 
Hey John, another way to do jerky if you already have a dehydrator you can smoke your meat in your smoker at 140 for a couple of hours then remove to the dehydrator. If no dehydrator and you are trying to make jerky you will need the fan.
