It's here!

Hey DT, Welcome from Kansas City I have a #1 & #3. I foresee a lot of good BBQ coming your way. Don't skip the seasoning part. And enjoy a couple of slabs of ribs.

Thanks, everyone, for all the kind wishes. But I think the arrival of my new smoker might have ended our drought here in CA. It's hardly rained at all over the past few years, but today it's pouring, so my big weekend is temporarily on hold.

Can't complain, though. We really need the rain.

Awesome!
I'm still waiting on mine; thought it was going to be here yesterday but now I'll to wait until Monday.

I've also smoked in torrential downpours with no cover several times before wiseing up and setting my #3 under my covered breezeway. No issues whatsoever. I was more surprised that my Maverick had no issues with as heavy as the rains were that it has sat out in.

The rain stopped, the smoker is seasoned, and I have a 16-lb. packer cut brisket in the fridge. My plan now is to trim down the fat just a little, brine in DM's butt brine for about 16-18 hours, inject with DM's brisket injection (thanks, DM!), rub it with mustard and a dry rub recipe I got from a friend, and put it in the smoker late tomorrow afternoon. I'm using mesquite chunks.

Any thoughts or advice before I start?
