E es1025 New member Jul 26, 2015 #1 Been very busy at work the past month, i did smoke ribs 3 racks and a pork butt. Stop on. I changed my final temp on the butt to 198 instead of 200. Omg it was unreal. Incredibly juicy. The piedmont sauce was a perfect compliment.
