Hey Y'all,
I was curious on the different techniques that are being used out there to prevent meat drippings from dropping on the doghouse, just over the heating element. I've noticed that these drippings will burn and effect the flavor of the meat. I'm trying to prevent this by using a disposable drip pan, but I've noticed that the pan plays with the internal temperature of my smoker, and I still have to be careful with the proximity of the doghouse.
