How bout a spare?

Just a quick note to report on the fantastic spare ribs I smoked yesterday in the #2.  I was planning to do some SLC ribs but Sams only had babybacks or spares so I picked out an 8.25 # pkg of spares.  Planned to dry brine the night before but got in late and said what the heck, I'll simplify cleanup and do it right before the cook.  I was able to get the smaller of the two slabs on the rack whole and the other was cut in 2 pieces that fit on the second rack side by side.  Used 2.9oz hickory and smoked for 6 hours at 225.  I removed the smallest piece and let the rest cook 30 more before pulling and tented with foil for 20 minutes.  Jeff's original rub was up against Famous Dave's and the wife and family chose the FDs as their favorite but I really couldnt decide which I preferred.  Both were great and the ribs were pull off the bone tender.  Not many pics but here's a finished shot.

Maybe my best yet Dale?  I used the 'drains' keep it simple method and am enjoying the fruits.  Leftovers tonite may be even better :)
 
It's usually a pretty good sign if the ribs were so good that you didn't have time to take many pictures. ;)
 
Man, you have me lusting for ribs!  I made 9 racks, last week, for our truck drivers, and only "sampled" 2 small ones from the end.  In the words of Everett, from "Oh Brother, Where Art Thou?"... "I'm afraid half a gopher would only serve to arouse my appetite without beddin' her back down."  ...So it goes with 2 small ribs.
