Hello All,

Great forum and discussions you all have going on here. My S3 is due in today. UPS shows it sitting on the dock 5 miles from here! Hoping to get it all seasoned up and do some ribs tomorrow.

This is my first smoker. I've been purchasing whole pigs for a year and needed a good smoker for charcuterie, sausages, bacon, etc. S3 seemed like a real bargain compare do the competition. My buddy owns a catering business and has a CS in his kitchen and size wise, heater wise, S3 looks as good if not better.

I have the parts coming in as well for Heatermeter. I built an electric brewery in the basement last year so I'm pretty psyched to get some automation built into this puppy. I've attached a couple photos showing the brew kettles and control panel I built along with three plastic conicals I temperature control with a window AC chilling 8 gallons of glycol. Fun stuff!
