I just ordered a model 2 And was wondering if it would go higher then 250 degrees w/ an auber pid?  If so how high will it go?
 
No unless you bypass the stock controller. with the PID you leave the controller set at 250 then run your temps with the Auber.
 
You can definitely go higher than 250 if you bypass the stock analog controller.

There are instructions on how to do the bypass in this section.

The smoker is rated up to 350 degrees.

I'll let the Auber experts talk about how high they have taken their smokers.
 
I've run 325 in the bypassed #2, but no higher.  I've actually only done that once, in the quest for crispy chicken skin (fail), so now I just stick to low and slow - max 250.  The main reason I like the bypassed setup, with the Auber, is that it puts the Auber in complete control.  I believe cutting out the "middle man" stock controller increases efficiency and accuracy.  If you're not going through it, it can't create any problems!
