Heading out to space camp, smoking on hold till next week!

I promised the grand kids (9 & 10) a special trip this year so we are off to space camp in Huntsville later in the week. After the trip they will come back and spend a week here in Florida.

They are already talking about the things they want me to make including Brisket and bacon. The only issue is that they will only be here for six days and since bacon takes seven and few more, I will most likely we will pass on that. I just pulled the Angus Brisket 12 lbs from the freezer and put it in the refrigerator until I get back on Monday of next week.

I want to go too and then come back and eat brisket. I will be a volunteer grand kid if you'll have me, lol. :)

Have fun! This is what I like to call "making memories", you'll all remember this trip for the rest of your years. They will tell their grand babies about it. Good times!

I don't know RG, you would have to promise to be good in the car :)

It should be a fun trip, I know the boys are pumped for it. I wanted to give the kids an experience that says, hey you can do anything.

Me, well after being in the service, not sure I am looking forward to sleeping in bunks and eating cafeteria food, but I will will survive :)

I am looking forwarded teaching the kids a bit about BBQ. Brisket, ribs, bbq chicken and we will see what else time allows!

I visited the center for about an hour in '83 while on temporary duty at Redstone Arsenal.  It was  very interesting.  Considering all that has happened since my visit, I bet it has grown considerably. Enjoy!
 
Well we made it to Huntsville last night so I decided we should try out Bib Bob Gibson's BBQ. Below is a photo of the boys standing by the sign.

For dinner we tried the chicken, pulled BBQ beef, the turkey, onion rings and fries.

To be honest I was expecting some a amazing BBQ, but while it was good, it was not even close to what we could do in our smokers. I did find that I really did like the white sauce on both the chicken and the turkey.

The boys said the chocolate pie and the apple was were really good.....

Here is the recipe for the white sauce.

Ingredients

    2 cups mayonnaise
    1 cup distilled white vinegar
    1/2 cup apple juice
    2 teaspoons prepared horseradish
    2 teaspoons ground black pepper
    2 teaspoons fresh lemon juice
    1 teaspoon salt
    1/2 teaspoon cayenne pepper

(Makes 4 cups)

Directions
In a large bowl, combine all the ingredients and blend well. Use as a marinade, baste, or dipping sauce. Store refrigerated in an airtight container for up to 2 weeks.

Oh well off to space camp today!

Big Bobs is massively overrated, pretty much like everything that people in Alabama think is great that is in Alabama.  ;D

It was better than a chain restaurant, but not really great BBQ. But I did like the white sauce and bought a couple of bottles to compare with the recipe I have.
