Happy 4th of July - What are you smoking?

I just wanted to wish everyone a Happy 4th of July.
Tomorrow will be smoked baby back ribs, potatoes and corn on the cob!

Got a butt in now for my son and DIL who are having friends over to their apartment tomorrow.  My wife and I are having friends over tomorrow for some baby backs.  Then Sunday we are having a few neighbor families over when I will do another butt and a brisket.

We have been dealing with so much rain in June along with MIL surgery, it has been a smoking dry spell.  According g to my journal, las pt smoke was on 5/5.😕. So I guess I am making up for it now.  This smoker just makes it too darn easy.  Before my SI, I averaged about 3 smokes a year.  And now, I am doing 3 in a week and not feeling any anxiety over that fact!

Smoked Shrimp is to die for here is my recipe!

Smoked Shrimp in Butter Sauce

1.5 lb. fresh St Augustine shrimp, shell on but devein.
8 oz. Italian dressing
1 1/2 stick unsalted butter
1 T Chef Paul seasoned blackened redfish magic
2 t (my rub, any low salt will work)
1 T lemon juice
1 T minced garlic

Mix all ingredients, except the shrimp in a small pan and cook over medium heat until butter is melted. Remove from heat and allow the sauce to cool. Place shrimp in throw away pan, cover with sauce, make sure the shrimp is well coated and then place in smoker.

1.1 oz. mesquite wood
1.1 oz. sugar maple wood

Smoke time 50 minutes at 225 degrees.

Just finished dinner, baby back ribs, corn on the cob, smoked baked potato and smoked beans!

Thanks, Greg!  I've been working on some home remodeling for about a week now and decided to skip smoking today.  I go back to work on Monday, so I'm thinking I'll do the shrimp on Sunday, instead.

Hey Larry,
I just bought Key west shrimp from Costco (they taste like they just came off the boat) Looking to do this recipe in a few weeks, when my traveling is done!

It was Greg, be hard too stuff al that in a #3. I honestly haven't used my #3 since last August. I made piles of jerky for a wilderness trip we took on ATV's.

If I need some dinner I toss it in at work, but nothing can make jerky like a SI with a fan.

Pork butt today turned out perfect - tender, flavorful meat with crispy bark.  Used DM's brine for the first time (though just mixed, not heated per his original recipe), I'm a believer now!
