Game Day Wings

Threw down on some Sunday wings. Smoked for 1 hour with cherry at 250, tossed with sauce in aluminum pan then back in for an hour. Finished on the grill to crisp up the skin. Best wings I've made yet.

Thanks Tony. I've smoked wings countless times  and while always tasty, the skin texture wasn't where I wanted it. The grill step was an absolute game changer that I will be using from now on.
 
I did this last weekend. Smoked for about an hour, then tossed them on the grill. I noticed that it reduced flare ups on the grill as well by starting them in the smoker.

Great looking wings, Tim.  That's high on my list of things to smoke so I have a few questions.  How much cherry and did you chop it into small pieces?  Did you brine, and if so, for how long?
 
Sue I used one chunk that was about 1.5 ounces. I didn't brine them but you certainly could. I just cut them and seasoned them with the same rub I use on ribs then threw them in a zip lock bag in the fridge for about 3 hours. Give them a try and you'll be glad you did.
 
Sue, I don't believe there's any need to brine wings. They're not meaty enough to benefit from a brine.
