Meathead does not like electric smokers, that's why you did not see the SI listed. He thinks that meat must be exposed to the fumes from combusting wood or charcoal to taste like true BBQ.
Yeah, Roger's right about Meathead! He has some great stuff on his site, and I use it, but he tends to get a little over-the-top with his professorial, high and mighty, opinions! I take what I want, and leave the rest. I'm pretty sure Steve linked it because there is a lot of good BBQ info there, and not necessarily because he wanted a reciprocal link. Maybe, if we all email Meathead about the great Q we make in the SIs, he'll come around!
