Cant make, Saturday is work on the road for me, but for those who might be close by



PULLED PORK CLASS ON SATURDAY JANUARY 24TH!

WE'RE SMOKIN' SOME BOSTON BUTT FOR MAKING PULLED PORK FOR SOME GOOD EATIN!

Class will be taught by Fred Bernardo using and demonstrating methods and techniques he has learned from cooking hundreds of pork shoulders including some trophy-winners! Every aspect of cooking this classic barbecue meat will be covered from where to buy it and what to look for, to presentation and serving... and every step in between.

They are a store that push the "Eggs" and some homemade off name mega bucks smokers.


Some might need a trailer hitch for their smokers, but not me so far:)
 
That's what I thought!  Certainly nothing wrong with that, and great to see someone creative enough to get people to pay money to hear him "teach" them about smoking butts!  Dang, wish I'd have thought of that!!  I'd gladly put one of mine, or many of our members, butts up against his! 

Funny story - we had a driver appreciation week at my company awhile back.  One of our vendors had a guy who was a competition smoker.  He brought a $10,000 pit out, that he built.  It was absolutely beautiful.  He smoked pork butts, and sat by his pit all night.  When the final product came out, pretty much every single person (20), in my office, said "It was good, but yours is better!"  And, from my taste perspective, they were right!  His was dry and kind of bland.  So, it goes to show that even a $10k smoker doesn't necessarily guarantee the results!  And, that's where we have the advantage!  We get to focus on the prep - rubs, brines, wood selection, etc...  They focus on the process!  Tending a smoker all night for mediocre results?  I'm out.  Sleeping while I produce stellar results?  All in! ;)

Or, let me put it this way:
"Having a pit that turns heads when you pull into the contest grounds, but you have to tend it every minute of the night? ....$10,000.  Having a smoker that produces better BBQ, even while you sleep? ...Priceless! ;D
