Started the process today, will have them in the #3 tomorrow.
I believe I read that you smoke them for 5hrs? Any suggestions on time and heat?





 
Looking good!  Keep with the plan...at 225 or 235F they should be good to go within 5 to 5.5 hours.  No peaky!  When I do BBs, I will take them out at 4.5 hours and apply BBQ sauce, then back in for the last hour, but this is optional.
 
I did ribs tonight, I smoked them at 235 for 5 hrs. took out sauced them and back for 30 min. Was very good and juicy. I did the toothpick test to see if they were done. The toothpick went in and moved it around some and pull out no problem. Felt like a butter knife going into hot butter. Was fall off the bone tender.
 
Your prep looks great, Rod!  What kind of rub is that?

Since you're new to ribs in your SI, I would start checking them at 4.5 hours.  Use a toothpick - tender in, and pull meat sideways from the bone, all good!  If not, go another 30 min and try again.  5 hours is not a hard and fast rule - it all depends on the ribs!  Those look pretty meaty, so I would suspect you're looking at 5+ hours, but you never know.  Don't forget the water pan next to the smoke box!

Pan of water in the bottom, next to smoke box
235 temp. 4.5 hours
Then wrapped in foil with sauce for 45 min.
NO left overs, Turned out great.


 
Thanks, I am glad I waited for this #3 smoker to come back in stock. Also, the toothpick check is something I seen in a post. That is a good tip.
 
Again thanks, next Tuesday will by my first shoulder in the #3. I am not sure about the time. I am hope this is about a 10 to 12 hour smoke for one thats about 10lbs. I will try the brine one this one. It will be the first time I have brined a shoulder.

Will provide pictures and results.
