First Smoke - Pork Fest

12 Hour with dry rub then 6:30 am start over Hickory with splash of Apple....  only H2O in the liquid container.  8)  Updates to follow......

UPDATE:  6.5 hours later now....  While looking at Baby Back ribs, the left rack 'broke' apart resulting in a quick taste test - excellent.  Will keep on for another 1.5 hours though.  Pork butt internal temp riding at 180F.  Plan is to keep it on for several more hours and rest up before dinner.....  QUESTION:  What Beer to match with Hickory/Apple Smoked Pork?  decisions decisions decisions

Baby backs usually take in the 4.5 to 6 hour range depending on cooker temp and personal preference. Are you keeping them on another 1.5 hours past the 6.5 hour range? Sounds like they were already fall-apart. Unless I am misunderstanding.
 
UPDATE:  Ribs off at 6 hours.  Still moist but slight bit more fat cooked away.  Delicious.    Pork off when reaching 190F.  Sliced to show cross section put pulls apart with ease.

Model 1 is a great smoker for my family of 4.
