UPDATE: 6.5 hours later now.... While looking at Baby Back ribs, the left rack 'broke' apart resulting in a quick taste test - excellent. Will keep on for another 1.5 hours though. Pork butt internal temp riding at 180F. Plan is to keep it on for several more hours and rest up before dinner.....
