Injected Saturday evening and rested overnight. 4:30 am rubbed down on the smoker with cherry and apple wood at 5:30 am. Mopped every two hours. Foil wrapped after 10 hours another 3 hours hit 195 rewrapped and in a cooler to rest. Unwrapped glazed and back in the smoker for an hour. 13.5 hours and we have pulled pork with an Eastern Carolina Vinegar sauce.
