First chicken

Greetings, I did my first full chicken today. Looked super out of the smoker. The meat was excellent. I think I can use the skin to recap my tires. I wondered what you all meant by rubbery skin, now I know. The meat was tasty, moist and cooked to near perfection.
 
Our cats thought it was quite tasty. It did keep the meat moist and tasty. Not quite as good as grandmas cast iron skillet fried chicken was 50 years ago.
 
I consider chicken skin a disposable moisture barrier for the gold inside!  Pics next time, Ron - we love pics around here! ;)
 
slightly disappointed to read this about the skin, i LOVE skin on whole chicken.
anybody have a way of getting the skin tender like baked chicken?

You'd have to foil it, to get it tender...which kind of defeats the purpose of smoking it. ;)
 
I love the skin. There are a couple of ways to achieve good to great results. I usually remove the skin after the smoke and spread out on a baking stone & put in the oven to crisp up (great results). With whole chickens I preheat the smoker with the wood box out & set the auber to 375. Once the box reaches 250 open her up & place the chicken and wood box in & close. @ this point I also turn the James Jerky Drier on & no water pan. The final level of crispness is good. If you are cautious it is not a problem, no different than opening a preheated oven.
 
That's an interesting way of doing the pre-heat thing, Walt!  I like it!  I'm going to have to try it...since I think I've tried just about every other method to get crispy skin! :o  I know I gave up on it, for a stress-free life, but I'm not afraid to get back on the crispy horse again!! ;D
