Finally I am ready to start smoking again...

Well I have been in the process of moving for the last three months, so smoking was on hold and I sold my trusty #2.

My new 3D just arrived and I gave it the 4 hour burn-in and everything went well. I am out of town most of this week, but will be smoking some ribs next weekend. I decided to buy a cart to go with it and I love the storage. The only minor complaint I have is that the PID display is hard to read since it is in the back and up pretty high. I may need to use a step stool to set the smoke :)

Other than that, I am looking forward to putting the new unit to work.

Man did I miss smoking the last few months.

In November we decided to sell our homes in Florida and buy a cabin in the Georgia mountains. We finally moved in this last week and the first thing I ordered was the new smoker.

I am looking forward to learning the new in and outs with the new 3D.

I have been wanting to order a brisket from Creekstone Farms, Franklin's BBQ orders all his briskets from them. But I think I will practice on a few from RD first!
