Fast Turkey....really fast...(I think)

12 pounder....started at 36 degrees internal breast measurement... 36 ambient temp...

hit 165 in approximately 3.5 hours at 250 degrees.  At 165, opened up cabinet, let out excess heat, (and plenty of moist air)...have unit now set at 140 for the rest......This used to take more than double the time with the charcoal/unit....I'm really digging the #2....
 
250 for the smoker temp if that is what you were asking.

In a perfect world the thigh would hit 170-175 and if at the same time the breast would hit 165.

+1. I've found positioning the turkey, back-side-down, on a lower rack (closer to the heating element/smoke box) helps get that dark meat to a higher temp, while still shielding the breast meat.
 
On my last turkey, it turned out pretty rubbery. We discussed this in the following thread and we concluded the same thing that I had my turkey too high in the box.

I'm smoking another turkey tomorrow and will be placing my turkey on a lower rack this time. Hopefully this one will turn out better.
