Eggplant Parm

While out at the flea market this 3:00 am my wife (while brilliant, but lets me cook) tried her hand at eggplant parm.

Two, peeled/cut , layered in salt to peel away moisture eggplants

Pan oil fried with egg/crumb wash

Layer in casserole with tomato sauce, we use Barilla chunky

Fresh basil from the porch (happy summer!)

Lots of cheese.

Bake to warm.


She's a keeper!
