Tomorrow is my husbands bday. I'm inviting family up for my first smoked meal that they have ate with us. Ok my husband and sister in-law can't eat pork. So I got some beef ribs for them. They don't have alot of meat on them. You may have saw pics of them in another thread I posted. And I will be making st.louis pork ribs. We want to eat at 6pm. I'm hoping since the beef don't have alot of meat on them they will get done within a hour or so apart. So what time do you suggest I put them in, I was thinking 11am and cooler them if they get done early? Oh there will be 2 racks of beef and 3 of pork. I'm assuming this will be ok in my 3D.
