Now that I've got everybody's attention ....has anybody noticed if bigger pork butts tend to be tougher than smaller one? Say a 10 pounder vs. a 6 or 7 pound?
It doesn't matter in either case.... ....Large butts will turn out just great but you have to give the time for "magic" to happen. One caution is that if you go too small on the meat, it can sometimes take longer than you expect. Not sure why but it seems to be the case.
