Brined overnight, smoker all ready got up early popped in the smoker..  Sat down watching a little tv.  2 hours later Shoooooottttttt, or a form of that word! Forgot to rub it down.  Too late a night and too early am.  So thought quickly.  Decided to rub em.  Slatherd on mustard brown sugar rub,.... Back on in.  Guess we'll see.

You will no doubt lengthen your cook time when you opened your smoker, but you'll benefit from getting the rub on those butts. Cook time for butts is rather lengthy and butts are very forgiving. Take them to 185-190 degrees internal and you should be good to go. Cooked my last two at 235, but again that is my preference. Happy Smoking!

Buford, you should be fine. Butts are incredibly forgiving, especially if you have brined them. Might I suggest a checklist for future smokes (used to be an amateur pilot and learned this the hard way!)
