Recipe and pic on the poultry thread.  Below is machine thoughts.

1st off, well made machine for anyone on the fence.  I did see on the site there is a hold till more come in.  2015 models?  Just got mine two weeks ago.

Anyway............1st smoke today in 37 degree weather.  Machine took 40 mins to get to 235 degrees.  I guess thats expected from a cold start.

I thought I would see more cycle heat.  Range was 235 to 260 with thermo set at 250.  Swings seemed low, which I guess is a good thing.

Temps next week are expected to be low 20's at night.  Next is to "dry" run a turkey breast test on my wife before I make for a crowd on the holiday.

It's a solid cold weather performer, John!  Many of us smoke all winter long, and in some really extreme temps!  Your temp swings are tight, and yes, the time to temp you showed was normal.  Don't be afraid to fire that bad boy up when it's not fit for man nor beast outside!  ...then go sit by the fire while it does its thing! ;)

My coldest smoke last winter was -32, no problem and that was before the addition of the Auber so I'm looking forward to some good old fashioned Mn. weather this winter, nothing like the smell of hickory on a cold winter day!

So glad I found this post before I asked the same question.  Temps this morning in Kansas were in the teens.  Up to 20 now and wanted to smoke my first thing ever...the second turkey breast I've been saving since Thanksgiving just for the smoker.  Was afraid it was too cold.

Will get some seasoning on it and get it ready to go.  Wish me luck!
