E es1025 New member Dec 24, 2014 #1 I have two racks of babies getting happy in the fridge with some memphis dust. The plan is to smoker for 5 hours or so at 235. 2oz of either cherry or apple and a water pan. Rest for an hour and have as an appetizer. Looking to be done by 130pm est.
