Well I didn't have much time to smoke anything else this weekend so I went after some chicken thighs. Totally old school with no brining just some olive oil and Cajun spice. Put it in the SI2 with some plain ol' H2O in a pan along with 4 oz of Apple wood at 225. 2 1/2 hours later I took them out at 165. Nice an juicy! ;D
