Some beef ribs I did while camping in Kentucky.
I made my own PID style temp control. These were cooked for about 3.5 hours @ 275*.
I dried brined and rubbed them the day before. Put them in at room temp with a good handful of Hickory chips.
The higher temp helps to power through the stall and doesn't seem to affect tenderness or moistness.
The little #1 is a very durable and able machine.
