Butcher Shop Road Trip and Baby Backs

Well after taking a close 2 hour trip, Kutztown Folk Festival.  Funnel cake, smoked turkey legs, smoothies, fresh fries, and more..............

PS, my son needs help on funnel cake.  How can anyone NOT LIKE IT!

Decided to take a trip to local butcher shop.

If you are in the area, well worth the look!  Bring a larger cooler than you thought.

Easy located, between Allentown PA and the Cabelas along that interstate too.

I picked up these "smoked" baby backs.  Hard to describe, they sell them as treats and not re-heat ones.  Cooked and ready to eat, warm or out of the cooler.

I'm curious if anyone can guess how they make these.  Looks more done like jerky and not smoked like anything I've done before.


A must try if in the Central PA area. 

I've had their smoked spare ribs (before) but they sell out quick.  Call ahead if you have a wish list.  Overall a pretty large facility and what a great smell even in the parking lot!

Wow, John, they look more like cured ham than ribs!  But, they also look pretty tasty!  Gotta love some funnel cake, too! ;)

100 degrees is extra low and slow. 


Salt cure rest for a week.

Who tried this with ribs on the SI?  curious
