Brisket this weekend

Got a request from my daughter for a brisket this weekend. Going to buy a flat and inject and let rest overnight.  The flats are typically 3-4 lbs. Do you guys think I could smoke two flats with one temp probe. One flat was not enough last time?

I do 2 briskets and pork loins at the same time, with one probe, no problems.  ....as long as they're reasonably the same size.  With the Maverick 732, I believe you attach another meat probe to the bbq temp port and use that side as another meat thermometer, too. 
 
I believe that DM is on to something, adding a meat probe to the BBQ temp input is a great idea and worth a shot.
