Breakfast For Supper

Sometimes you just need to do a fattie!  ;) Since I didn't want to get up early enough to make one for breakfast, I decided to do breakfast for supper. I started with a bacon weave, rolled some sausage, added hashbrowns, cheese, scrambled eggs, and topped with the left over bacon. All the basic food groups!  ;D After a little salt and pepper, I rolled the fattie and put it in the refrigerator for a few minutes to firm up. The into the smoker with 3 oz of maple at 250 until I got an IT of 165 deg. Pulled the fattie, and put it in a 500 deg oven for 10 minutes to crisp the bacon. It turned out great! By keeping it simple, all of the flavors played together well with just the right amount of smoke. This is a keeper.

I'm putting this on my list of things to do out at the lake this summer. Will have to smoke/grill it on the stick burner that I have at the lake instead of the SI though.

Is there any reason I couldn't make these up at home and put in the fridge until it was time to smoke/grill?
 
Greg, no that shouldn't be a problem. For most recipes you could probably freeze them. The refrigeration actually helps them to firm up and hold their shape better. Can't wait to see your results.
 
Yeah, I thought it shouldn't be a problem. I was thinking I could put them in a meatloaf pan or something similar to prevent them from being damaged while traveling to the lake in the cooler. But, I think this will go over big with my friends/family that I camp with. I have seen these before, but never actually done one. I think I will try a couple different ones with different insides.
 
O..M...G, Bob!  You're a genius!  That's the BEST fatty recipe I think I've ever seen!  Can't believe someone hasn't done that before!  Add some sausage gravy to that, and you'd be over the top and off the rails!! :o
 
Tony, I thought about the sausage gravy too. Maybe on an English muffin, do slices of the fattie in a skillet to warm up, sunny side up egg on top and gravy over all. What's not to like?  8)
