Bought another one!

Since I have to homes in 2 different states we decided to buy a#3 for here at the farm. Excited to get it,i hope I like it as much as o do my 3D.

Since you are well aware of the temp swings in the #3, I am pretty confident that you will love the #3 and may even appreciate its simplicity.

I love my #3 and have no intentions of upgrading to a #3D, but if I ever did I would probably get a #3D so I would have one of each just like you. I have contemplated getting a #3D and keeping that at home and taking the #3 out to the lake. That still may happen someday when I have some extra dough.
 
Thanks Greg, as far as the temp swings I'm under the impression to just leave it alone and let it do its thing correct?

Exactly! I rarely even temp my box anymore unless I am only smoking one piece of meat. If smoking multiple pieces of meat, I temp both meats and don't worry about the box temp.

You will see the largest swings at the beginning of the smoke. Then as the smoke goes on and the meat comes up to temp, the swings will go down quite a bit and continue to get less and less as the smoke nears the end. At the beginning of a smoke, I can see as much as a +/- 25 degree swing. But, after the meat gets up to say 140-150, the swings are closer to +/- 10-15 degrees.

Other than maybe fish or jerky where tighter temps are preferred, the swings do not affect the smoke at all. And for fish/jerky, I just use a little lower temp than normal to ensure the top-end of the swing doesn't go too far over my desired temp. Then as the smoke goes on and the temp stabilizes, I slowly increase the temp again. Really not a hard work around.
 
That sounds good!! I bought a thermoworks chef alarm to check the meat temp. But I dont think I'll even check the box temp.
 
Congratulations on the new #3 Laura. I dont plan on upgrading to the 3d because while it certainly has its place I am perfectly satisfied with the analog control and I dont tinker with success. Happy Columbus day!
 
Tony, this time I got just the standard 3. I love my 3D ,bit figured I will enjoy tje simpleness of the standard as well
