Boston butt in the new #2

As Tony says we are off to the races. New smoker arrived Friday evening, got seasoned Saturday a.m. and has its first smoke going on as of 6:30 PM Saturday night. 3 1/2 ounces of apple and two ounces of Pecan produced smoke in about 15 minutes and continue smoking well into the third hour.

The 10 pound Boston butt is at 177° 15 hours into the smoke. I'm not sure yet but I think I may be in the stall. The thin whisp of smoke coming out now smells so sweet and is driving me nuts.
Started the smoke at 225° setting but maverick indicated a temperature of 266° And temperature was still climbing when I turned the setting back. After some fine-tuning I ended up with a setting of around 210°  Maverick now indicates temperature swings between 202° and a 244°. (give or take)

Ralph, 20 deg swings up and down is not uncommon and makes no difference overall. I'll bet you are going to love the results.
 
Yes I'm looking forward to it Bob. I'm close to 16 1/2 hours now and the temperature has risen to 181° so I may be coming out of stall. Temperature has risen 10° in the last five hours.
I'm feeling sorry for my neighbors as they have no idea where that great aroma is coming from. Lol
As far as the temperature swings go, no problem as I had expected that. PID Controller will be in for the next smoke.  :)
 
Yes very hard waiting and waiting. I just hit 190° at 20 hours  10 minutes.
Very happy with the #2  ;D But As I recall the drip pan was larger in my #1!!  :(
 
Thanks Keith. We do enjoy our view. Our top floor condo puts us up about 40 feet into the trees and we occasionally see bald eagles straight out the back off our lanai.

I just pulled it after 21 1/2 hours. 95° IT ... Loud cheer  :)

Now we will let it rest and then enjoy.  ;)

Thank you Gregg. Complements from you guys with a lot of smoker experience are good for my ego.
My original plan was to start this at 9 PM last night but after reading one of your posts I decided to move it up and that was a good decision so IOU a double thanks!  😉

My only comment is a suggestion to help on all smokes - nothing to do with that beautiful butt!  I notice you use the hanging juice pan.  Next time, don't hang it from a shelf.  Instead, set it on the floor of the smoker, right up against the smoke box.  This design was in place before folks realized that the best results come from having the water/juice pan against the heat source.  You'll get more moisture that way.  Some have even cut the hanging tabs off their pans!  If all else fails, just get some disposable aluminum mini-loaf pans and use them.  Cheap, and easy to clean!
 
Thank you Bob, we have eaten and I cannot believe it can get any better.

My thanks to all that have contributed in this forum. Now I have to get busy with the food saver, another tip that I picked up in this forum.

I had read this on a couple of post one by Gregg, but I figured I would try hanging it on the bottom shelf that was in place just to hold the miss Lily container. I positioned Miss Lily directly against the woodbox. My only concern was a tip over from movement of my smoker cart during the smoke. I sometimes move my cart and utilize an exhaust fan to keep the smoke out of my condo. Our temperatures here are mostly in the 70s and we keep our doors wide-open.
I am all in when it comes to improvement but it is really hard to believe that it can get any better. I do appreciate the tip and will try to secure Miss Lilly on the bottom... 😊
