Boneless pork chops

So I only have two smokes under my belt and learning as I go.  With the price of meat now Im still unsure of using pricier cuts. So I smoked 6 boneless chops tonight using the Auber on my analog #2.  2 1/2 hours in Auber said they were at 143. Got them in the house and they were actually at 134. I had already turned off smoker and left door open for cleaning so I put them in the air fryer to finish up and OH MY!!!!!! They have been the best thing I’ve smoked so far. Used sugar maple with apple juice inside cabinet. I was worried they would be dry but far from it.  I guess I need to search to find out how to fix the Auber now.

Yep. I just assumed that the Auber was correct but next time I will be taking the digital out with me and doing a double check
 
Always good to calibrate or check your thermometers with ice water and boiling water.  Just be aware that you level above sea can produce a boiling temp different than the standard 212 degrees.
