Boneless Beef Short Ribs

Decided to try some boneless short ribs in the #3 today. Seasoned up about 8 lbs of them and put them in the smoker for about 4.5 hours. Transferred them to an aluminum pan with a little beef broth and covered tightly with foil. Pulled them out about 3 hours later. I decided to pull them apart for shredded beef sandwiches. Vacuum sealed the leftovers. I must say, they were delicious!

My wife made enchiladas tonight for dinner with some left over steak. Homemade refried beans, cold beer. I'm happy!
 
Look at that! That looks wonderful!

Enchiladas would be good! I also make tacos that call for a mix of chuck roast and short ribs. Birria tacos....calls for adobo sauce, which is pretty easy to make if you have access to ingredients.

But, whatever you do with those short ribs, it’s gonna be good!
