Best way to do the Boston Butt??

Again remember I have never ever done a BB, so looking for advice on cutting it or pulling it apart?  The first time I did a brisket I cut it wrong and it dried out quick.  Don't want to do my BB this way.

Right now I have them wrapped in Foil, with a towel inside a cooler, waiting for the 2 hours to pass.

I got the Bear Claws when I got the Maverick 733 dual probe, but never have used them.

Do I need to flip them over during the wait process to let the juices redistribute or leave them alone?

When I pull, I unwrap the butt in an AL pan, and I just use two forks (the claws will work) and start shredding the meat.  You can shred as much as you want to until you get to the desire level of pulled pork.  It will work out just fine, just a matter of how many chunks of meat that you want versus shredded pork.  I often remove big chunks of the bark and then cut them up and redistribute into the meat.

One other suggestion:  after you pull the pork in a pan, you might want to add a bit more rub for seasoning.

Can't wait to hear the results!

Thanks Steve, didn't think about adding some rub for the seasoning back on it.  Also the crusty part, would not have thought about cutting them up and putting them back in with the rest of it.

I use my claws that I got with my 733 to just pull the meat apart as best I can and distribute the bark throughout. I also add some rub and mix it in too. Without doing this I have found that the meat often lacks enough seasoning.

It is sometimes a struggle to keep any bark as I have teenagers that like to grab pieces as I am pulling. ;)

Looks like the pulling part is covered, but you do not have to flip them while they are resting. This is another no peak type deal, just leave them alone.

Thanks Bill, I believe as you said it is better to not flip them in the cooler, as it let a lot of grease come up to the top.  Lesson learned on this one for sure.

Hey Richard, I also learned something in reading your posts from Greg after you pull the pork to add some rub to the meat for a little more seasoning.

Yep Bill, it works for me.  Made me and the wife a sandwich and wanted to try it out first on this before adding any to the whole mess.  Added some rub and bbq sauce and man oh man did it make a difference.
