Been lurking, finally pulled the trigger

Hello from KCMO.  I've been lurking and thinking Model #3 to do large smokes and foodsaver the leftovers.  After waiting for a while for them to start and reading all the experiments people have been doing, I've decided the Lazy Q method should lead to more smokes rather than larger ones and just ordered my #2.  Guess I'll have to cut my briskets/ribs now but I can certainly live with that.
 
The #2 is a great size for the average user and I think you will be very pleased with your purchase.

Sounds like a good plan. How many people will you typically be smoking for? The #2 is a good size for most people, but I do love my #3.
 
Good choice Steven. You obviously have given it real consideration and picked the right one for you. Nice to have you here.
 
generally I'm smoking for 4 with (at the very least) the next lunch or dinner so call it 8 people.  I started thinking #3 so I'd have lots of foodsaver packs of pulled port and brisket for quick meals that were also delicious, but I decided I'd just use the #2 more often with less leftovers (per smoke).  I could see parties of up to 20, but I'm pretty sure I can make that work pretty easily in the #2 as well (brisket and BB then smoke ribs while those are resting)
 
I think you made a good decision based on those numbers. I may need to get out my food saver and do some freezing next smoke or just make less. My wife told me today at lunch, "I'm kinda' getting tired of pulled pork".
 
Is that grounds for divorce in your state?!  ;)  LOL, nah even I can get tired of it eventually....then it's time to make brisket or ribs!  Not sure I could get tired of smoked meat (try a skillet scramble or breakfast burrito with your pulled pork if you haven't already)
 
Welcome from Delaware, Steven.  I have a #2 and it works perfectly fine for me and family.  I even smoke for neighborhood parties with no problems.  I think you will be in great shape with the #2.  Cheers!

Welcome, you made a great choice. I have a number three for a couple of years and absolutely have no regrets. It was worth the extra money for the larger wattage imo.

I would recommend ribs as you first smoke.

 
Welcome Stephen and enjoy your SI smoker. I love my model #2 but picking the correct size can be difficult. I initially bought a #1 .. Too small for my needs.
 
Well, the #2 arrives today and smoking starts about noon tomorrow for a birthday shindig Sat.  Brisket and pulled pork with homemade sauces is on the menu along with whatever everyone else brings (sheesh, cooking my own birthday dinner!)

I also was torn between the #2 and the #3 but finally bought the #2 and could not be happier.
