Beef spare ribs, or so they called them from the butcher shop. 2 lbs bone on end perpendicular? ($11.00) Different than what you would expect from a rib. Cut name?
6 ribs total.
Two each got basic JANES crazy salt and CRAZY pepper

Two got http://spiceologist.com/ Coffee mixture rub
Three hours in the SI at 220 with hickory. Last 45 mins (one of each) got wet mopped with a basic BBQ suace. They were thin, so I didn’t even bother tempin’ them!
VERDICT………………………….Wonderful, better with the ones that were sauced!
Janes Crazy salt does a better job than you might think! Plain, simple, good meat flavor.
Oakridge was each of our fav. A bit of heat, a bit of sweet.
Spiceologist was a close 2 or 3 to others. Depends on what you like for heat/coffee flavor.
If you try to repeat this recipe and get thin ribs. Don’t let them in the smoker forever!
PS, when I do this next time I’ll cut time by ½ hour
PSS, side was / were fingerings with carrots / EVOO, rub, brown sugar in a Griswold. Top top rack
